12 ounces pasta (penne or fusilli recommended)

1 pound chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach (or 2 cups frozen, thawed and drained)

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust according to taste)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente, usually 8-10 minutes. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and set aside.

    Sauté the Chicken: In a large, deep skillet, heat olive oil over medium heat. Season the diced chicken pieces with salt and pepper. Add the chicken to the skillet and sauté for about 5-7 minutes, or until the chicken is browned and no longer pink in the center. Once cooked, remove the chicken from the skillet and set it aside on a plate.
