4 medium-sized potatoes, peeled and diced

2 cups fresh or frozen corn kernels

1 medium onion, finely chopped

4 cups vegetable broth

1 teaspoon dried thyme

½ teaspoon smoked paprika

Sauté the Aromatics: In a large pot, pour in the olive oil and heat it over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until it becomes translucent and soft. Next, incorporate the minced garlic, cooking for an additional minute until it releases its aromatic fragrance.

    Cook the Potatoes: Add the diced potatoes to the pot, stirring well to ensure they are coated with the flavorful oil and aromatics. Allow the potatoes to cook for 3–4 minutes to begin softening.

      Add Broth and Corn: Carefully pour in the vegetable broth, ensuring it completely covers the potatoes. Stir in the corn kernels, dried thyme, smoked paprika, and a pinch of salt and pepper. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 15-20 minutes, or until the potatoes are fork-tender.

        Blend for Creaminess: Using an immersion blender, partially blend the chowder directly in the pot, leaving some chunks of potato and corn for a delightful texture. If you do not have an immersion blender, transfer approximately half of the chowder to a standard blender. Blend until smooth, then return the blended portion back to the pot.

          Add Cream: Stir in the heavy cream (or coconut milk), allowing the chowder to simmer gently for an additional 5 minutes. Taste and adjust the seasoning with more salt and pepper as necessary.
