8 oz rotini or fusilli pasta

1 cup cherry tomatoes, halved

1 cucumber, diced into small pieces

1 bell pepper (red or yellow), diced into bite-sized chunks

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon freshly squeezed lemon juice

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

Fresh parsley or basil leaves for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini or fusilli and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta in a colander and rinse briefly under cold water to stop the cooking process. Set aside to cool completely.
