1.5 lbs (680g) boneless, skinless chicken thighs

1 cup long-grain rice (either jasmine or basmati for aromatic flavor)

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup heavy cream

1 fresh lemon (for zest and juice)

2 tablespoons extra virgin olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: In a mixing bowl, season the chicken thighs generously with salt, pepper, smoked paprika, and dried thyme. Rub the seasonings into the meat, ensuring it is evenly coated.

    Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken thighs. Sear them for 5-7 minutes on each side, or until they are golden brown and no longer pink in the center. Remove the chicken from the skillet and set aside on a plate.

      Sauté Aromatics: In the same skillet, lower the heat to medium and add the unsalted butter. Once melted, add the finely chopped onions, stirring them for about 3-4 minutes until they are soft and translucent. Add the minced garlic, cooking for another 1-2 minutes while stirring constantly to prevent burning.
