Creamy Lemon Dill Salmon Pasta

8 oz (225g) spaghetti or linguine

2 tablespoons olive oil

1 lb (450g) salmon fillet, skin removed

Salt and pepper, to taste

2 cloves garlic, minced

Zest of 1 lemon

1 cup heavy cream

1 tablespoon Dijon mustard

Juice of 1 lemon

1/4 cup grated Parmesan cheese

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 cup cherry tomatoes, halved

Fresh dill sprigs, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta:

    In a large pot, bring 4-5 quarts of salted water to a rolling boil. Add the spaghetti or linguine and cook according to the package instructions until al dente, usually around 8-10 minutes. Once cooked, reserve 1 cup of the pasta water, then drain the remaining water and set the pasta aside.

      Prepare the Salmon:

        While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the salmon fillet generously with salt and pepper on both sides. When the oil is shimmering, carefully place the salmon skin-side down in the skillet. Cook for 4-5 minutes without moving it to allow a golden crust to form. Flip the salmon and continue cooking for an additional 3-4 minutes until it’s cooked through and flakes easily with a fork. Once done, remove the salmon from the skillet and set it aside on a plate.

          Make the Sauce:

            In the same skillet, reduce the heat to low and add the minced garlic. Sauté gently for about 30 seconds until the garlic is fragrant but not browned. Add the lemon zest, heavy cream, and Dijon mustard into the skillet, stirring well to combine. Allow the mixture to bubble softly for about 2-3 minutes, stirring occasionally.

              Add Lemon and Cheese:

                Squeeze the juice of one lemon directly into the sauce, then stir in the grated Parmesan cheese and chopped dill. If the sauce appears too thick, gradually add some of the reserved pasta water until you reach your desired consistency. Taste and adjust seasoning with additional salt and pepper as necessary.

                  Combine Everything:

                    Flake the cooked salmon into large bite-sized pieces and carefully add it back into the skillet along with the halved cherry tomatoes. Gently toss everything together over low heat until the salmon is warmed and the tomatoes begin to soften slightly.

                      Toss Pasta:

                        Add the drained pasta to the skillet and gently toss everything together until the pasta is well-coated with the creamy lemon dill sauce. If the sauce still seems too thick, incorporate more of the reserved pasta water until it's just right.

                          Serve:

                            Plate portions of the creamy lemon dill salmon pasta and garnish each dish with fresh dill sprigs and a lemon wedge on the side. Serve warm and enjoy the delightful flavors!
