1 cup pearl barley

4 cups vegetable broth

2 cups sliced mushrooms (cremini or button)

1 medium onion, diced

2 cloves garlic, minced

1 large carrot, diced

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

3 tablespoons olive oil

1 cup heavy cream (or substitute with coconut cream for a vegan option)

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Barley: Start by rinsing the pearl barley thoroughly under cold running water. Once rinsed, set it aside to drain.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until the onion becomes translucent.

      Add Vegetables: Incorporate the minced garlic, diced carrot, and diced celery into the pot. Cook for an additional 5 minutes, stirring occasionally until the vegetables soften slightly.

        Cook the Mushrooms: Add the sliced mushrooms to the pot. Continue to sauté for about 6-7 minutes, or until the mushrooms are golden brown and their moisture has evaporated.
