Creamy Ricotta Spinach Toast

2 cups fresh spinach leaves, thoroughly washed and chopped

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 teaspoon lemon zest (from about half a lemon)

Salt and freshly ground black pepper, to taste

4 slices of crusty bread (sourdough or ciabatta recommended)

1/4 cup freshly grated Parmesan cheese

A pinch of red pepper flakes (optional, for heat)

Fresh basil or mint leaves for garnish

Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until it becomes fragrant but not browned.

    Add Spinach: Toss in the chopped spinach leaves and cook for 2-3 minutes, stirring frequently, until they have wilted down. Season with salt and freshly ground black pepper to taste.

      Combine with Ricotta: In a mixing bowl, combine the sautéed spinach with the fresh ricotta cheese. Add the lemon zest and mix together until the mixture is smooth and creamy. Taste and adjust seasoning if needed.

        Toast the Bread: While the spinach-ricotta mixture cools a little, prepare the bread. Toast the slices until they are golden brown; you can use a toaster or grill pan for this task.
