1 large head of cauliflower, cut into bite-sized florets

2 tablespoons of extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Sea salt and freshly cracked black pepper, to taste

1 cup cream cheese, softened at room temperature

1/2 cup sour cream

1/2 cup freshly grated Parmesan cheese

1/4 cup nutritional yeast (optional, for an extra cheesy flavor)

2 tablespoons freshly squeezed lemon juice

1 tablespoon fresh chives, finely chopped (for garnish)

1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot enough for roasting.

    Roast the Cauliflower: On a large baking sheet, toss the cauliflower florets with olive oil, garlic powder, onion powder, sea salt, and black pepper. Make sure the florets are well-coated with the oil and spices. Spread them out in a single layer and roast in the oven for 25-30 minutes, or until they are golden brown and tender. Stir halfway through the roasting time to promote even cooking.

      Blend the Dip: Once the cauliflower is roasted, allow it to cool slightly for about 5 minutes. In a food processor, combine the warm roasted cauliflower with cream cheese, sour cream, Parmesan cheese, nutritional yeast (if using), and lemon juice. Blend on high speed until the mixture is smooth and creamy, scraping down the sides as necessary.

        Taste and Adjust: After blending, taste the dip and adjust the seasoning as needed by adding more salt, pepper, or lemon juice. Blend again for a few seconds to fully incorporate any adjustments.
