1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup shredded sharp cheddar cheese

½ cup finely chopped green onions (plus extra for garnish)

½ cup diced red bell pepper

2 tablespoons fresh cilantro, chopped (optional)

Tortilla chips or an assortment of fresh vegetables (such as carrot sticks, cucumber slices, or bell pepper strips), for serving

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures your oven is hot enough to roast the corn perfectly.

    Roast the Corn: In a large mixing bowl, combine the fresh corn kernels with the olive oil, smoked paprika, garlic powder, onion powder, and a generous sprinkle of salt and pepper.
