Creamy Spinach and Sun-Dried Tomato Pasta

8 oz (225g) of your favorite pasta (fettuccine, penne, or spaghetti)

2 tablespoons olive oil

2 cloves garlic, finely minced

4 cups fresh spinach, roughly chopped

1 cup sun-dried tomatoes, finely chopped (preferably packed in oil for added flavor)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese (plus extra for serving)

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional, for an added kick)

Salt and freshly cracked black pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Before draining, reserve about 1 cup of the pasta water to adjust the sauce later. Drain the pasta and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. When the oil is shimmering, add the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic is fragrant and golden, taking care not to let it burn.

      Add Spinach and Tomatoes: Add the chopped spinach and the sun-dried tomatoes to the skillet. Stir well, cooking for 3-4 minutes until the spinach is wilted and vibrant.

        Make it Creamy: Lower the heat to a gentle simmer and pour in the heavy cream, stirring until well combined. Allow the cream to heat through without bringing it to a boil.

          Add Cheese and Seasoning: Incorporate the grated Parmesan cheese, Italian seasoning, and optional red pepper flakes into the sauce. Stir continuously until the cheese melts and the sauce becomes velvety. If the sauce thickens too much, gradually mix in some of the reserved pasta water until you achieve a creamy consistency.
