8 oz (225g) pasta of your choice (fusilli or penne are excellent choices)

1 cup frozen artichoke hearts, thawed and roughly chopped

2 cups fresh spinach leaves, tightly packed

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup cream cheese, softened at room temperature

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly ground black pepper to taste

Fresh parsley, finely chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add your selected pasta and cook according to the package instructions until al dente (usually about 8-10 minutes). Once cooked, reserve ½ cup of the pasta water, then drain the rest and set the pasta aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, making sure not to let it burn.

      Add Artichokes and Spinach: Stir in the chopped artichoke hearts and cook for an additional 2-3 minutes to heat them through. Next, add the fresh spinach to the skillet and cook, stirring occasionally, until the spinach wilts (about 2 minutes).

        Create the Sauce: Lower the heat to medium-low and slowly stir in the heavy cream and softened cream cheese. Add the grated Parmesan cheese, onion powder, and red pepper flakes (if using). Continue stirring until the cheeses melt completely and the mixture forms a luscious, creamy sauce.
