12 large pasta shells

2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1 cup grated mozzarella cheese, divided

½ cup grated Parmesan cheese

1 cup cream cheese, softened to room temperature

1 garlic clove, minced

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for a kick)

2 cups marinara sauce, store-bought or homemade

Fresh basil leaves, for garnish

Drizzle of olive oil for added richness

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a light coating of olive oil to prevent sticking.

    Cook Pasta Shells: Bring a large pot of salted water to a rolling boil. Add the pasta shells and cook according to the package instructions until they are al dente. Once cooked, drain the shells and rinse them under cold water to halt the cooking process. Set the shells aside to cool.

      Sauté Spinach: Heat a splash of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until it becomes fragrant. Stir in the chopped spinach and cook until it wilts, taking about 2-3 minutes. Remove the skillet from heat and set it aside.

        Prepare the Filling: In a mixing bowl, combine the ricotta cheese, half of the grated mozzarella, grated Parmesan, softened cream cheese, the sautéed spinach, salt, black pepper, and red pepper flakes (if using). Mix everything thoroughly until it forms a creamy and smooth filling.

          Stuff the Shells: Carefully spoon a generous amount of the creamy spinach mixture into each cooked pasta shell. Arrange the filled shells in the greased baking dish, placing them with the open side facing up.
