8 oz (225g) pasta of your choice (penne or fusilli work beautifully)

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 small onion, finely chopped

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup crumbled feta cheese

½ cup freshly grated Parmesan cheese

1 teaspoon lemon zest (about half a lemon)

1 tablespoon freshly squeezed lemon juice

Salt and freshly ground black pepper, to taste

A pinch of red pepper flakes (optional, for a spicy kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes, or until it becomes soft and translucent. Next, stir in the minced garlic and sauté for an additional minute, or until fragrant.

      Add Spinach: Gradually incorporate the fresh spinach into the skillet, stirring constantly until it wilts. This will take about 2-3 minutes. The spinach should be vibrant and reduced in volume.

        Make the Cream Sauce: Lower the heat to a gentle simmer and pour in the heavy cream. Add the crumbled feta and grated Parmesan cheese, stirring continuously until both cheeses have melted and the sauce is smooth and creamy.

          Combine Pasta and Sauce: Gently add the drained pasta into the skillet with the creamy spinach and feta sauce. If the sauce seems too thick, gradually stir in some of the reserved pasta water, a little at a time, until you achieve your desired creaminess.
