Creamy Spinach & Mushroom Pasta

300g pasta (fettuccine, tagliatelle, or your favorite type)

2 tablespoons olive oil

2 cloves garlic, finely minced

250g fresh mushrooms, sliced (cremini, button, or a mix)

150g fresh spinach, thoroughly washed and roughly chopped

1 cup heavy cream

½ cup freshly grated Parmesan cheese

½ teaspoon ground nutmeg

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring a generous amount of salted water to a roaring boil. Add the pasta and cook according to the package instructions until al dente. Remember to reserve ½ cup of the pasta cooking water before draining the pasta. Once drained, set the pasta aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the minced garlic. Sauté for about 1 minute or until the garlic is fragrant but not browned.

      Add the Mushrooms: Stir in the sliced mushrooms, cooking for approximately 5-7 minutes. Stir occasionally until the mushrooms are golden brown and have released their delicious juices.

        Incorporate Spinach: Next, add the roughly chopped spinach to the skillet. Cook for another 2-3 minutes, stirring frequently, until the spinach wilts and reduces in volume.

          Make the Cream Sauce: Pour the heavy cream into the mushroom and spinach mixture, stirring well to combine all the flavors. Reduce the heat to low and let it gently simmer for about 2-3 minutes. Gradually stir in the Parmesan cheese, allowing it to melt and create a rich, creamy sauce.

            Season: Add the ground nutmeg and season the sauce to taste with salt and freshly cracked black pepper. If the sauce is too thick for your liking, gradually add the reserved pasta water until you achieve your desired creamy consistency.

              Combine Pasta and Sauce: Carefully add the drained pasta to the skillet, tossing gently to coat the pasta evenly with the luxurious creamy sauce. Allow it to cook together for another minute or two, ensuring everything is heated through and well combined.
