3 cloves garlic, minced

2 (14-ounce) cans diced tomatoes, including their juice

2 cups vegetable broth

1 teaspoon granulated sugar

1 teaspoon dried basil (or more for extra flavor)

½ teaspoon salt

¼ teaspoon ground black pepper

1 cup heavy cream

½ cup fresh basil leaves, torn into pieces

Grated Parmesan cheese (for garnish)

For Grilled Cheese:

8 slices of sourdough bread

4 tablespoons unsalted butter, softened to room temperature

8 slices sharp cheddar cheese

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté until it becomes translucent, approximately 5 minutes. Next, stir in the minced garlic and continue cooking for about 1 minute, or until fragrant.

    Add Tomatoes and Broth: Pour in the diced tomatoes (with juice) along with the vegetable broth. Sprinkle in the sugar, dried basil, salt, and black pepper. Stir to combine, then bring the mixture to a gentle simmer. Allow it to cook uncovered for about 20 minutes, stirring occasionally.

      Blend the Soup: After 20 minutes, remove the pot from heat. Using an immersion blender, puree the soup until it reaches a smooth consistency. If you don’t have an immersion blender, carefully transfer the soup in batches to a traditional blender to blend until smooth, then return it to the pot.

        Incorporate Cream: Return the pot to low heat and gently stir in the heavy cream. Allow it to warm for a few minutes, then add the torn fresh basil leaves, ensuring they are evenly incorporated throughout the soup.

          Make Grilled Cheese: While the soup is warming, prepare the grilled cheese sandwiches. Spread a thin layer of softened butter on one side of each slice of sourdough bread. In a large skillet over medium heat, place four slices of the bread butter-side down.
