Creamy Tuna Spinach Casserole

2 cans (5 oz each) tuna in olive oil, thoroughly drained and flaked

2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, completely thawed and well-drained)

2 cups cooked pasta (penne or rotini are ideal)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese, divided

1 cup cream of mushroom soup

1/2 cup sour cream

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon paprika

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for added crunch)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Cook the pasta according to package instructions until al dente, then drain and set aside.

      Sauté Spinach: In a large skillet set over medium heat, warm the olive oil. Add the chopped fresh spinach (if using frozen, make sure it's thoroughly drained). Sauté for about 2-3 minutes until the spinach is wilted and vibrant. Once done, remove from heat.

        Mix Ingredients: In a large mixing bowl, combine the flaked tuna, cooked pasta, sautéed spinach, halved cherry tomatoes, half of the shredded cheddar cheese, cream of mushroom soup, sour cream, garlic powder, onion powder, black pepper, salt, and paprika. Mix thoroughly until all ingredients are well incorporated and coated.

          Assemble the Casserole: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly across the bottom.

            Add Cheese and Breadcrumbs: Evenly sprinkle the remaining cheddar cheese and grated Parmesan cheese over the top of the casserole. If you prefer a crunchy topping, sprinkle the breadcrumbs on as well.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then carefully remove the foil and continue baking for an additional 10-15 minutes, or until the casserole is bubbling and the top is nicely golden brown.

                Garnish and Serve: Once baked, remove the casserole from the oven and allow it to cool for a few minutes. If desired, garnish with freshly chopped parsley before serving. Serve warm and savor the delightful flavors!
