2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 cups fresh baby spinach

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Prepare the Chicken: Start by seasoning both sides of the chicken breasts with garlic powder, Italian seasoning, and a generous sprinkle of salt and pepper. Ensure the chicken is evenly coated for maximum flavor.

    Sear the Chicken: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the seasoned chicken breasts. Cook for approximately 6-7 minutes on each side, or until they are golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and place it on a plate, covering it loosely with foil to keep warm.

      Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it. Next, incorporate the halved cherry tomatoes, cooking for about 2-3 minutes until they begin to soften and release their juices.
