Ingredients

12 oz pasta (your choice: fettuccine, penne, or spaghetti)

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon red pepper flakes (adjust according to your spice preference)

1 cup cherry tomatoes, halved

2 cups fresh spinach, packed

1 cup vegetable broth

1 cup coconut cream (substitute with heavy cream for a non-vegan option)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese (optional, for serving)

Instructions

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the pasta of your choice and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Then, drain the pasta and set it aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes, or until it becomes translucent. Mix in the minced garlic and red pepper flakes, cooking for an additional minute, or until fragrant.

Add Tomatoes and Beans: Incorporate the halved cherry tomatoes and the drained white beans into the skillet. Cook for 5-7 minutes, stirring occasionally, allowing the tomatoes to become tender and release their juices.

Incorporate Spinach: Add the fresh spinach to the skillet, stirring until it wilts down, which should take about 2-3 minutes.

Create the Sauce: Pour in the vegetable broth and bring the mixture to a gentle simmer. Stir in the coconut cream (or heavy cream) and the dried oregano. Season with salt and pepper to your liking. Let everything simmer for another 5 minutes to allow the sauce to thicken slightly.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing everything together until the pasta is coated in the creamy sauce. If the sauce is too thick for your liking, gradually add the reserved pasta water until you reach your desired consistency.

Serve: Spoon the creamy Tuscan white bean pasta into individual serving bowls. Garnish with fresh basil leaves and, if desired, sprinkle generously with grated Parmesan cheese for a delicious finish.

Enjoy: Serve immediately while hot, and relish the rich and flavorful combination of ingredients in this delightful dish!
