2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon smoked paprika

½ teaspoon garlic powder

Prep the Potatoes: Start by thoroughly washing and scrubbing the russet potatoes under cold running water to remove any dirt. Once clean, pat them dry using a clean kitchen towel.

    Slice the Potatoes: Using a mandoline slicer or a sharp knife, slice the potatoes into thin pieces, aiming for about 1/8 inch thick. It’s important to keep the slices as uniform as possible to ensure they cook evenly.

      Soak the Slices: Transfer the potato slices into a large bowl filled with cold water. Allow them to soak for at least 30 minutes. This soaking process helps eliminate excess starch, leading to crispier chips once cooked.

        Dry the Slices: After soaking, drain the water and lay the potato slices on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove all moisture, as this is crucial for achieving a perfect crunch.

          Season the Slices: In a large mixing bowl, combine the thoroughly dried potato slices with olive oil, sea salt, smoked paprika, garlic powder, onion powder, and black pepper. Toss gently but thoroughly to ensure every slice is evenly coated with the seasoning mixture.
