Ingredients

2 medium zucchinis

1 cup panko breadcrumbs (for extra crispiness)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

Olive oil spray

Instructions

Prep the Zucchini: Begin by washing and thoroughly drying the zucchinis. Cut off both ends and slice them into thin rounds (approximately 1/4 inch thick). This thickness ensures they cook evenly. To reduce moisture and enhance crispiness, pat the zucchini slices dry using a paper towel.

Prepare the Coating: In a shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until evenly distributed.

Make the Egg Wash: In another bowl, beat the eggs until they are well mixed. This egg wash will help the breadcrumb coating adhere beautifully to the zucchini.

Coat the Zucchini: Take each zucchini slice and dip it into the egg wash, allowing any excess to drip off. Then, transfer it to the breadcrumb mixture, coating it generously. Press down lightly to make sure the crumbs stick well.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure the chips cook evenly and become crispy.

Arrange in the Air Fryer: Lightly spray the air fryer basket with olive oil spray to prevent sticking. Arrange the breaded zucchini chips in a single layer within the basket, ensuring they do not overlap. Depending on the size of your air fryer, you may need to work in batches.

Air Fry the Chips: Give the tops of the zucchini chips a quick spray of olive oil. Air fry them at 400°F (200°C) for 10-12 minutes, flipping them halfway through the cooking process. They should turn golden brown and crispy.

Cool and Serve: Once finished, carefully remove the zucchini chips from the air fryer and allow them to cool for a few minutes. As they cool, they'll continue to crisp up. Serve them immediately alongside your favorite dipping sauces, such as marinara or tzatziki.
