2 large zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 large egg (for filling)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 cup all-purpose flour (for dusting)

2 large eggs (for egg wash)

1 cup panko breadcrumbs (for extra crunch)

Prepare the Zucchini: Start by slicing both zucchinis lengthwise into thin strips, aiming for about 1/8 inch thick. For precision, consider using a mandoline slicer. Once sliced, lay them out on paper towels and lightly sprinkle with salt to help draw out moisture. Allow them to sit for about 20 minutes. Then, gently pat the zucchini strips dry with another paper towel.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, shredded mozzarella cheese, one large egg, garlic powder, dried oregano, salt, and black pepper. Mix thoroughly until all ingredients are well blended and the mixture is creamy. Set aside for assembly.

      Assemble the Ravioli: Take one prepared zucchini strip and spoon about a tablespoon of the cheese filling onto one end. Gently fold the zucchini over the filling. Place a second zucchini strip on top to create a ravioli shape and press the edges firmly to seal. For extra security, use a fork to crimp the edges. Repeat this process with the remaining zucchini strips and filling.

        Coat the Ravioli: Prepare a dredging station with three shallow bowls: one filled with all-purpose flour, one with two beaten eggs, and the last with panko breadcrumbs. Dip each assembled ravioli into the flour first, shaking off any excess. Next, move it to the egg wash, coating it thoroughly, and finally, roll it in the panko breadcrumbs until fully covered. Place the coated ravioli on a plate or tray and set aside.

              Serve: Once cooked, remove the crispy ravioli from the air fryer and allow them to cool for a couple of minutes. Serve them warm with a side of marinara sauce, pesto, or your preferred dipping sauce for added flavor.
