1 cup diced tomatoes (either fresh or canned)

1 cup shredded lettuce

1 cup shredded cheese (cheddar or a Mexican blend works great)

1/2 cup diced onions

1 avocado, diced

1/2 cup sour cream or Greek yogurt

12 small corn tortillas

Cooking oil (for frying)

Fresh cilantro (for garnish; optional)

Lime wedges (for serving)

Instructions
 

Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook, breaking it apart with a spatula, until it's browned and cooked through. Drain any excess fat. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until the mixture is thick and aromatic.

    Prepare the Tortillas: In a separate skillet, heat a small amount of cooking oil over medium-high heat. Once hot, carefully place one corn tortilla in the skillet.
