2 ripe avocados

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional for added heat)

Cooking spray or olive oil, for greasing

Fresh cilantro or lime wedges, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper and lightly spraying or brushing it with olive oil to prevent sticking.

    Prepare the Avocados: Carefully cut the avocados in half and remove the pit. Use a spoon to scoop out the flesh, then slice the avocado halves into wedges or strips, according to your preference. Set the cut avocado pieces aside.

      Set Up the Breading Station: Organize your ingredients into three shallow bowls: place the all-purpose flour in the first bowl, whisk the eggs together in the second bowl, and in the third bowl, mix the panko breadcrumbs with the garlic powder, smoked paprika, cayenne pepper (if using), along with a pinch of salt and pepper.

        Coat the Avocado Wedges: Take one avocado wedge and first dip it into the flour, shaking off any excess. Next, immerse it in the beaten eggs, ensuring a complete coating.
