1 lb firm white fish fillets (such as cod, haddock, or tilapia)

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, finely chopped (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to help with easy cleanup and prevent the fish nuggets from sticking.

    Prepare the Fish: Start by rinsing the fish fillets under cold running water. Gently pat them dry using paper towels to remove excess moisture. Cut the fillets into bite-sized pieces, roughly 1-2 inches in size, to create nuggets.

      Set Up Your Breading Station: Organize three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, add the beaten eggs. In the third bowl, combine the panko breadcrumbs with garlic powder, onion powder, paprika, salt, pepper, and fresh parsley (if using).

        Bread the Fish: Take each nugget and first coat it lightly in the flour, allowing any excess to fall away. Next, dip the floured nugget into the beaten eggs, letting any extra drip off. Finally, roll the nugget in the panko breadcrumb mixture, pressing gently to ensure the crumbs adhere well.

          Arrange on Baking Sheet: Lay the coated fish nuggets out on the parchment-lined baking sheet in a single layer. Ensure they are not touching to allow even cooking. Lightly spray the tops of the nuggets with cooking spray or olive oil to enhance their crispiness while baking.
