Crispy Baked Taco Bowls

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

1 cup black beans, rinsed and drained

1 cup cooked corn (fresh, frozen, or canned)

1 ripe avocado, diced

½ cup sour cream

½ cup salsa

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Shape the Tortillas: Lightly brush the tops and bottoms of each tortilla with olive oil. Press each tortilla into the cups of a muffin tray to form bowl shapes. If the tortillas feel brittle, warm them in the microwave for about 10-15 seconds to make them easier to shape.

      Add Cheese: Sprinkle approximately 2 tablespoons of shredded cheddar cheese into the bottom of each tortilla bowl. This will help the bowls maintain their structure during baking.

        Season and Bake: Transfer the muffin tray to the preheated oven and bake for 10-12 minutes or until the tortillas are golden brown and crispy. Be vigilant to avoid burning!

          Prepare Filling: While the tortilla bowls are baking, prepare the filling. In a large mixing bowl, combine the black beans, corn, diced tomatoes, diced avocado, chili powder, ground cumin, and season with salt and pepper to taste. Stir the mixture until all ingredients are evenly mixed.

            Assemble Bowls: When the tortilla bowls have finished baking, remove them from the oven and allow them to cool for a couple of minutes. Carefully lift each bowl from the muffin tray. Begin filling each bowl with the prepared black bean mixture, layering generously.

              Top with Fresh Ingredients: After filling the bowls, add a generous layer of shredded lettuce on top. Follow this with a dollop of sour cream and a spoonful of salsa on each bowl.
