Crispy Chicken Caesar Wraps

2 large boneless, skinless chicken breasts

1 cup seasoned breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

4 large flour tortillas

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/4 cup cherry tomatoes, halved (optional)

Freshly ground black pepper, to taste

Olive oil spray (or oil for frying)

Prepare the Chicken: Begin by seasoning the chicken breasts generously with salt and pepper. Set up your breading station by arranging three bowls: one with all-purpose flour, another with beaten eggs, and the third with seasoned breadcrumbs.

    Bread the Chicken: Take each chicken breast and dredge it in the flour, ensuring to shake off any excess. Next, dip the floured chicken into the beaten eggs, coating it well, and finally press it into the breadcrumbs, making sure it is evenly coated.

      Cook the Chicken: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lay the breaded chicken breasts on it. Lightly spray the chicken with olive oil for extra crispiness. Bake in the oven for 25-30 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). For a quicker method, you can also pan-fry them in oil over medium heat, cooking for about 6-7 minutes on each side until they are crisp and fully cooked.

        Prepare the Wraps: While the chicken is cooking, combine the chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and halved cherry tomatoes (if using) in a large mixing bowl. Toss gently until the lettuce is evenly coated in the dressing.

          Assemble the Wraps: Once the chicken has finished cooking, allow it to cool slightly before slicing it into strips. Take a tortilla and lay it flat on a clean surface. Spoon a generous portion of the Caesar salad mixture in the center and place a few strips of the crispy chicken on top.
