Crispy Chickpea Greek Salad Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and freshly cracked black pepper to taste

4 large whole wheat or gluten-free wraps

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 bell pepper (any color), diced

½ cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled (or vegan feta for a plant-based option)

½ cup fresh parsley, chopped

¼ cup fresh lemon juice (about 1 large lemon)

½ teaspoon dried oregano

Crispy Chickpeas: Preheat your oven to 400°F (200°C). In a medium mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, ground cumin, and a sprinkle of salt and pepper. Toss thoroughly until the chickpeas are well coated. Spread the chickpeas evenly on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until they turn golden brown and crispy, giving the pan a good shake halfway through to ensure even cooking.

    Prepare the Salad: While the chickpeas are roasting, take a large mixing bowl and combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, diced bell pepper, sliced Kalamata olives, crumbled feta cheese, and chopped parsley. Stir gently to mix the ingredients evenly.
