14 oz firm tofu, pressed and cut into 1-inch cubes

1 cup broccoli florets

1 bell pepper (red or yellow), sliced into thin strips

1 medium carrot, julienned

1 cup sugar snap peas, trimmed

3 cloves garlic, finely minced

1-inch piece fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil (for frying)

1 tablespoon cornstarch

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon sriracha (optional for heat)

Sesame seeds (for garnish)

Green onions, thinly sliced (for garnish)

Instructions
 

Prepare the Tofu: Begin by pressing the tofu for at least 30 minutes to eliminate excess moisture, ensuring crispiness when cooked. After pressing, cut the tofu into 1-inch cubes. Place the cubes in a bowl and sprinkle with cornstarch, tossing gently until each piece is well-coated.

    Fry the Tofu: In a large skillet or wok, heat the olive oil over medium-high heat. Once hot, add the coated tofu cubes in a single layer, frying them until golden brown and crispy, about 3-4 minutes on each side. Once cooked, transfer the tofu to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add a splash of olive oil if necessary. Toss in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant. Next, add the broccoli, bell pepper, carrot, and sugar snap peas. Stir-fry the vegetables for roughly 5-7 minutes until they are tender yet still retain some crunch.

        Make the Sauce: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and optional sriracha until fully combined and smooth.

          Combine Everything: Once the vegetables are cooked to your liking, return the crispy tofu to the skillet. Pour the sauce over the tofu and vegetables, stirring gently to ensure everything is well-coated. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
