Crispy Watermelon Popsicles

With a simple blend of watermelon, coconut water, and fresh mint, you can create a healthy snack that's perfect for cooling down. Ingredients
  

1 small seedless watermelon (approximately 5 pounds)

1 cup coconut water

1 tablespoon freshly squeezed lime juice

2 tablespoons agave syrup or honey (optional, adjust according to your sweetness preference)

1/4 teaspoon sea salt

1 cup unsweetened shredded coconut

1/2 cup fresh mint leaves, chopped (for garnishing)

Instructions
 

Prepare the Watermelon: Begin by cutting the watermelon into quarters and carefully removing the rind. Scoop out the juicy flesh and chop it into small cubes. You’ll need around 4 cups of watermelon cubes to proceed with the recipe.

    Blend the Mixture: In a blender, combine the watermelon cubes, coconut water, freshly squeezed lime juice, choice of agave syrup or honey, and sea salt. Blend the mixture on high speed until it reaches a smooth and creamy consistency.

      Strain (Optional): If you prefer a more refined texture for your popsicles, consider straining the blended mixture through a fine-mesh sieve to eliminate any pulp or small particles.

        Fill Popsicle Molds: Carefully pour the blended watermelon mixture into your popsicle molds, filling each mold about 3/4 of the way full. Give the molds a gentle tap on the counter to free any trapped air bubbles.

          Add Coconut Coating: Place the shredded coconut onto a flat plate. Once the molds are filled, dip the tops of the popsicles into the shredded coconut to form a delightful crispy coating. Alternatively, for fresh crispness, you can freeze the popsicles first, then roll them in shredded coconut just before serving.

            Insert Sticks: Gently insert popsicle sticks into the center of each mold, ensuring they stand upright and are well-supported.

              Freeze: Place your filled molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until they are completely solidified.

                Release from Molds: When you're ready to enjoy your popsicles, take the molds out of the freezer. Run warm water over the outside of the molds for a few seconds, which will help loosen the popsicles. Then, gently pull on the sticks to release them.

                  Garnish and Serve: Before serving, garnish the popsicles with freshly chopped mint leaves for a pop of color and added flavor. Enjoy your refreshing watermelon popsicles on a hot day!
