Ingredients

1.5 lbs boneless, skinless chicken thighs

1 cup wild rice mix (preferably with seasoning)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 teaspoon Cajun seasoning (adjust based on heat preference)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for added heat)

4 cups chicken broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen corn

1 cup sliced okra (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Start by dicing the onion and chopping the red and green bell peppers. Mince the garlic cloves and set all the prepared ingredients aside for easy assembly.

Layer the Crockpot: Pour the wild rice mix into the bottom of the crockpot, ensuring it is spread out evenly across the base.

Add the Chicken: Place the boneless, skinless chicken thighs directly on top of the wild rice, ensuring they are evenly distributed.

Seasoning: In a small mixing bowl, combine the Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and black pepper. Mix thoroughly, then sprinkle the seasoning blend evenly over the chicken thighs for a flavorful coating.

Add the Veggies: Layer the diced onion, minced garlic, chopped red and green bell peppers, and frozen corn over the seasoned chicken. If you choose to include okra, add it to the top of the mixture as well.

Tomatoes and Broth: Carefully pour the can of diced tomatoes (along with their juice) over the layered ingredients. Follow this with the chicken broth, ensuring all the wild rice is fully submerged in the liquid for optimal cooking.

Cook: Cover the crockpot securely and set it to low for 6-8 hours or high for 3-4 hours. The dish is ready when the chicken is thoroughly cooked and tender, and the rice is soft.

Shred the Chicken: Once cooking is complete, use tongs to remove the chicken thighs from the crockpot. Shred the chicken using two forks until it is in bite-sized pieces. Return the shredded chicken back into the crockpot and stir gently to combine with the other ingredients.

Final Touches: Taste the mixture and adjust the seasoning if desired, adding more salt or pepper as needed. Just before serving, sprinkle fresh chopped parsley on top for a burst of color and freshness.

Serve & Enjoy: Ladle the spicy chicken and wild rice mixture into bowls and serve warm, savoring the rich and vibrant Cajun flavors in every bite!
