2 packages of instant ramen noodles (discard the seasoning packets)

2 cups cooked chicken, shredded or diced (grilled or rotisserie chicken works beautifully)

1 cup shredded carrots

1 cup red cabbage, thinly sliced

1 cup sugar snap peas, trimmed and halved

1/2 cup green onions, sliced (green and white parts)

1/2 cup roasted peanuts, chopped

1/4 cup fresh cilantro, chopped (optional)

For the Dressing:

1/4 cup soy sauce

3 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 tablespoon sriracha (optional; adjust based on your spice preference)

Salt and pepper, to taste

Prepare the Ramen Noodles: In a medium pot, bring about 4 cups of water to a rolling boil. Add the ramen noodles and cook for 3-4 minutes, or until they are just slightly tender but still retain a crunchy texture. Drain the noodles and rinse them immediately under cold water to halt the cooking process. Set them aside to cool completely.

    Make the Dressing: In a small mixing bowl, combine the soy sauce, rice vinegar, sesame oil, honey (or maple syrup), and sriracha (if using). Whisk together until the mixture is smooth and well blended. Taste and season with a pinch of salt and pepper.

      Combine the Salad Ingredients: In a large mixing bowl, combine the cooled ramen noodles, shredded chicken, shredded carrots, thinly sliced red cabbage, halved sugar snap peas, sliced green onions, and chopped peanuts. If you are including fresh cilantro, fold it in gently at this stage.

        Dress the Salad: Pour the prepared dressing over the mixed salad ingredients.
