Ingredients

8 oz (225g) high-quality dark chocolate (70% cocoa or more), finely chopped

1/2 cup (115g) unsalted butter, cut into small pieces

3/4 cup (150g) granulated sugar

1/4 teaspoon fine sea salt

1 teaspoon pure vanilla extract

4 large eggs, at room temperature

1/2 cup (50g) unsweetened cocoa powder, sifted

Optional: Confectioners' sugar, fresh berries, and whipped cream for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare an 8-inch (20cm) round cake pan by greasing it with butter and lining the bottom with parchment paper. This ensures easy removal of the cake after baking.

Melt the Chocolate and Butter: In a medium heatproof bowl, combine the finely chopped dark chocolate and pieces of unsalted butter. Place this bowl over a saucepan filled with simmering water to create a double boiler. Stir the mixture occasionally until it is completely melted and smooth. Once melted, remove the bowl from heat and let it cool slightly.

Combine Sugar, Salt, and Vanilla: Once the chocolate and butter mixture has cooled to a comfortable temperature, whisk in the granulated sugar, fine sea salt, and pure vanilla extract. Mix until everything is well incorporated and smooth.

Incorporate the Eggs: Carefully add the large eggs to the mixture, one at a time. Ensure to mix well after each addition until the batter becomes glossy and uniformly smooth.

Add the Cocoa Powder: Using a spatula, gently fold in the sifted unsweetened cocoa powder. Be careful not to overmix the batter; it should maintain its thick and rich consistency.

Bake the Cake: Pour the prepared batter into your greased and lined cake pan, smoothing the top with a spatula to create an even surface. Bake in the preheated oven for 25-30 minutes. The cake is ready when the top appears set and a toothpick inserted in the center comes out with a few moist crumbs, but no wet batter.

Cool the Cake: Allow the cake to cool in the pan for about 10 minutes. After that, run a knife along the edges to loosen it. Carefully invert the cake onto a wire rack to cool completely. Gently remove the parchment paper once cooled.

Serve: Before serving, lightly dust the cooled chocolate cake with confectioners' sugar. For an indulgent touch, serve it alongside fresh berries and whipped cream, enhancing both the flavor and presentation.
