Ingredients

8 oz (225g) bittersweet chocolate, finely chopped

4 oz (113g) milk chocolate, finely chopped

4 oz (113g) white chocolate, finely chopped

1 cup (240ml) heavy cream

1 tsp pure vanilla extract

1/4 cup (60ml) coffee liqueur (optional for an added depth of flavor)

1/2 cup (60g) cocoa powder (for coating, unsweetened)

1/2 cup (90g) chocolate sprinkles (for coating)

1/2 cup (60g) finely chopped nuts (hazelnuts or almonds, for coating)

Instructions

Prepare the Chocolate Mixture: In a medium heatproof bowl, combine finely chopped bittersweet, milk, and white chocolate. Set the bowl aside for later use.

Heat the Cream: In a small saucepan, heat the heavy cream over medium heat. Stir occasionally and watch for it to begin to simmer; be careful not to let it reach a full boil. Just before removing from heat, stir in the pure vanilla extract and coffee liqueur if you're using it for a richer flavor.

Combine Cream and Chocolate: pour the hot cream over the chocolate mixture in your bowl. Allow it to sit undisturbed for about 3-4 minutes; this lets the chocolate soften. Afterward, gently stir the mixture until every bit of chocolate is melted and you have a smooth, glossy ganache.

Chill the Mixture: Cover the bowl tightly with plastic wrap and refrigerate for approximately 2 hours, or until the ganache is firm enough to scoop and shape.

Shape the Truffles: Once the ganache has chilled and set, use a melon baller or a teaspoon to scoop out small amounts of the ganache. Roll each scoop between your palms to create perfectly smooth balls.

Coat the Truffles: Organize three shallow dishes for the coatings: one for cocoa powder, one for chocolate sprinkles, and one for finely chopped nuts. Roll each truffle in your desired coating, ensuring they are fully covered for that delightful finishing touch.

Chill Again: Place the coated truffles onto a parchment-lined baking sheet. Return them to the refrigerator for at least 30 minutes to set completely before serving.

Serve and Enjoy: Once the truffles are nicely chilled or at room temperature, plate them on a decorative serving platter. Indulge in the rich, velvety chocolate experience with each bite!
