1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1-2 cups beef broth (adjust for thickness)

1 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, diced avocado

Instructions
 

Sauté the Beef: In a large pot or Dutch oven, add 1 tablespoon of olive oil and heat over medium-high flame. When the oil is shimmering, add the ground beef. Cook for about 5 minutes, breaking it into smaller pieces with a wooden spoon until it’s evenly browned. Drain any excess fat if necessary.

    Add Vegetables: Stir in the diced onion, minced garlic, and diced bell pepper. Sauté the mixture for about 3 minutes, or until the vegetables begin to soften and the onion becomes translucent.

      Spice It Up: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir well to incorporate the spices into the meat and vegetables. Let it cook for an additional 2 minutes, allowing the fragrant spices to bloom.

        Combine Ingredients: Pour in the diced tomatoes (with their juices), kidney beans, black beans, and 1 cup of beef broth. Stir everything together until thoroughly combined. If you prefer a thinner chili, you can add another cup of beef broth.

          Simmer: Increase the heat to bring the chili to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered for 10-15 minutes. This will allow the flavors to meld and the chili to thicken. For a thicker chili, continue to simmer until it reaches your desired consistency.
