8 large lasagna noodles

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

1 tablespoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh basil or parsley, for garnish (optional)

Cook the Noodles: Begin by bringing a large pot of salted water to a rolling boil. Carefully add the lasagna noodles and cook according to the package instructions until they reach an al dente texture. Once cooked, drain the noodles and lay them flat on a clean kitchen towel, allowing them to cool slightly.

    Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, grated Parmesan cheese, the egg, Italian seasoning, and a pinch of salt and pepper. Use a spatula or spoon to mix the ingredients thoroughly until you achieve a smooth and creamy consistency.

      Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce across the bottom of a baking dish to prevent sticking. Take one cooked noodle and, using a spatula, spread approximately 2-3 tablespoons of the cheese mixture evenly along its length. Carefully roll the noodle from one end to the other to encase the filling.

        Arrange in Baking Dish: Place the rolled noodle seam-side down in the prepared baking dish. Repeat this process with the remaining noodles and cheese mixture until all are rolled and positioned together. Pour the remaining marinara sauce over the roll-ups, ensuring that they are generously covered.
