Easy Chicken Alfredo with Zucchini Noodles

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for added freshness)

Prepare the Zoodles: Using a spiralizer, transform the zucchinis into zoodles. Place the spiralized zucchini in a colander and sprinkle lightly with salt. Allow them to rest for about 10 minutes to help draw out any excess moisture.

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken strips with salt and pepper. Add them to the hot skillet, cooking for about 5-7 minutes or until the chicken is nicely browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
