Ingredients

1 lb boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and black pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cups cooked brown rice (or white rice)

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

1/2 cup shredded cheese (cheddar or a Mexican blend)

1/4 cup fresh cilantro, chopped (optional for garnish)

Lime wedges, for serving

Slices of avocado or guacamole (optional)

Instructions

Marinate the Chicken: In a mixing bowl, combine the sliced chicken with olive oil, ground cumin, chili powder, smoked paprika, garlic powder, onion powder, and a sprinkle of salt and black pepper. Toss the chicken strips well to ensure they are evenly coated in the marinade. Allow the chicken to marinate for about 10-15 minutes while you prepare the vegetables.

Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken strips to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and has a nice golden-brown color. Remove the chicken from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, add the sliced red and green bell peppers along with the onion. Sauté the vegetables for about 4-5 minutes, or until they begin to soften. Add the corn and continue to sauté for an additional 2-3 minutes, ensuring everything is heated through and well combined.

Combine Everything: Return the cooked chicken to the skillet with the sautéed vegetables. Stir gently to combine and cook for an additional 2-3 minutes, allowing the flavors to meld together.

Assemble the Rice Bowl: In a serving bowl, spoon a generous layer of the cooked brown rice as the base. Top this with the chicken and vegetable mixture, spreading it evenly. Add a scoop of black beans on top, followed by a generous sprinkle of shredded cheese.

Garnish and Serve: Finish the dish by adding a sprinkle of fresh cilantro on top (if desired). Serve the rice bowls with lime wedges on the side and optional avocado slices or guacamole for an extra touch of creaminess.
