Ingredients

12 oz (340g) penne pasta

2 cups marinara sauce (your choice of store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

1 tablespoon olive oil

Instructions

Preheat the oven: Start by preheating your oven to 375°F (190°C) to ensure it's at the right temperature for baking.

Cook the pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta in a colander and set aside for later use.

Prepare the sauce mixture: In a large mixing bowl, combine the marinara sauce and ricotta cheese. Add the dried oregano, garlic powder, salt, and freshly ground black pepper. Mix everything together until the ingredients are thoroughly blended.

Incorporate the vegetables: Carefully fold the halved cherry tomatoes and diced zucchini into the sauce mixture, ensuring that the vegetables are evenly distributed throughout.

Combine pasta and sauce: Return the drained penne pasta to the large pot. Pour the sauce mixture over the pasta, using a spatula to gently stir and coat every piece of pasta with the flavorful sauce.

Layer the bake: Take a 9x13 inch baking dish and lightly grease the bottom and sides with olive oil. Pour half of the pasta and sauce mixture into the dish. Sprinkle half of the shredded mozzarella and half of the grated Parmesan cheese over the first layer. Add the remaining pasta mixture on top to create a second layer.

Top with cheese: Evenly distribute the leftover mozzarella and Parmesan cheeses over the top layer of the pasta, creating a cheesy crown that will melt beautifully during baking.

Bake: Cover the baking dish securely with aluminum foil to keep the moisture in and bake it in the preheated oven for 20 minutes. After this time, carefully remove the foil and continue to bake for another 15 minutes. This will allow the cheese to bubble and turn a lovely golden brown.

Garnish and serve: Once your pasta bake is done, take it out of the oven and let it cool for a few minutes. Before serving, garnish the top with fresh basil leaves to add a pop of color and freshness.
