1 lb large shrimp, peeled and deveined

1 cup jasmine rice (or your preferred rice)

2 ripe avocados, diced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 cup red onion, finely chopped

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Cook the Rice: Begin by rinsing the jasmine rice under cold running water until the water is clear. In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring it to a boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for approximately 15 minutes, or until the rice is tender and all the water has been absorbed. Once cooked, remove from heat and fluff the rice gently with a fork.

    Prepare the Shrimp: While the rice is cooking, heat olive oil in a large skillet over medium heat. In a mixing bowl, season the peeled and deveined shrimp with chili powder, salt, and pepper, ensuring they are well-coated. When the skillet is hot, add the shrimp in a single layer. Cook for about 2-3 minutes on each side, or until they are pink, opaque, and cooked through.

      Mix the Salad Ingredients: In a large mixing bowl, combine the diced avocados, halved cherry tomatoes, diced cucumber, and finely chopped red onion.
