1 cup long-grain white rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

1 cup broccoli florets

1 carrot, thinly sliced

1/2 bell pepper, sliced (choose your favorite color)

Sesame seeds for garnish

Sliced green onions for garnish

Salt and pepper to taste

Cook the Rice: In a medium saucepan, combine the rice and either water or chicken broth. Bring to a vigorous boil. Once boiling, reduce the heat to low, cover the pan, and allow it to simmer for 15-20 minutes, or until the rice is fully cooked and the liquid has been absorbed. Once done, fluff the rice with a fork and set it aside, covered to keep warm.
