Ingredients
  

  • 1.0 pound ground turkey
  • 1.0 cup breadcrumbs
  • 0.5 cup finely chopped onions
  • 0.5 cup grated carrots
  • 0.5 cup chopped bell peppers
  • 2.0 cloves garlic, minced
  • 1.0 large egg
  • 0.25 cup ketchup
  • 1.0 tablespoon Worcestershire sauce
  • 1.0 teaspoon dried oregano
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.25 cup shredded cheese

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a muffin tin to prevent sticking.
  • Mix Ingredients: In a large mixing bowl, combine the ground turkey, breadcrumbs, chopped onions, grated carrots, bell peppers, minced garlic, egg, ketchup, Worcestershire sauce, oregano, thyme, salt, and pepper. If using cheese, fold it into the mixture as well.
  • Scoop and Shape: Using your hands or a spoon, scoop out about 0.33 cup of the mixture for each mini meatloaf. Shape them into small loaves and place them on the baking sheet or in the muffin tin.
  • Add Topping: Spread a thin layer of ketchup on top of each mini meatloaf for extra flavor and moisture while baking.
  • Bake: Place the meatloaves in the preheated oven and bake for 25-30 minutes, or until they are cooked through and the internal temperature reaches 165°F (74°C).
  • Garnish and Serve: Once baked, remove the mini meatloaves from the oven and let them rest for a few minutes. Garnish with fresh parsley before serving.
  • Enjoy: Serve them warm with a side of steamed vegetables or a fresh salad for a wholesome meal!
