Ingredients

2 lbs beef chuck, cut into 1-inch cubes

2 medium sweet potatoes, peeled and diced

4 medium carrots, sliced into rounds

1 large onion, chopped

3 cloves garlic, minced

4 cups beef broth

2 cups baby spinach (optional)

1 can (14.5 oz) diced tomatoes, undrained

1 tablespoon tomato paste

2 teaspoons dried thyme

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon black pepper

2 bay leaves

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sear the Beef: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the beef cubes generously with salt and black pepper. Working in batches, add the beef to the skillet, searing for about 4-5 minutes on each side until deeply browned. This caramelization will enhance the stew's flavor. Once browned, transfer the beef to a slow cooker.

Sauté Vegetables: In the same skillet, add the chopped onions and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and fragrant. Be sure to scrape up any flavorful browned bits stuck to the bottom of the pan, as these will contribute to a richer stew. Transfer this onion-garlic mixture to the slow cooker with the seared beef.

Add Remaining Ingredients: To the slow cooker, add the diced sweet potatoes, sliced carrots, undrained diced tomatoes, and tomato paste. Stir in dried thyme, smoked paprika, ground cumin, bay leaves, and additional salt as needed. Pour in the beef broth until all ingredients are covered. Gently stir to combine everything.

Cook: Secure the lid on the slow cooker and set it to cook on low for 8 hours or high for 4 hours. If you choose to add baby spinach, stir it in during the last 30 minutes of cooking for a fresh, vibrant touch.

Finish & Serve: After cooking, taste the stew and adjust seasoning with more salt if desired. Before serving, remove the bay leaves. Spoon the hearty stew into bowls and garnish each serving with a sprinkle of fresh chopped parsley. Enjoy it warm alongside crusty bread for dipping!

            Prep Time: 20 minutes | Total Time: 8 hours 20 minutes | Servings: 6

Presentation Tips: Serve the stew in rustic bowls, topping each with a sprig of parsley for color. Pair with slices of warm crusty bread or a side of cornbread to soak up the flavors.
