1 pound (450g) baby carrots (or regular carrots, cut into 2-inch pieces)

2 tablespoons harissa paste (adjust based on your heat preference)

2 tablespoons extra virgin olive oil

1 teaspoon honey (or maple syrup for a vegan alternative)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/2 teaspoon freshly cracked black pepper

Juice of 1 large lemon

Fresh cilantro or parsley for garnish (optional)

Crumbled feta cheese for topping (optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup a breeze, line a baking sheet with parchment paper.

    Prepare the Carrots: If you're using regular carrots, peel them and chop them into 2-inch pieces. If you have baby carrots, simply leave them whole. Add the prepared carrots to a large mixing bowl.

      Make the Harissa Marinade: In a separate small bowl, combine the harissa paste, olive oil, honey, ground cumin, smoked paprika, sea salt, black pepper, and fresh lemon juice. Whisk together until the mixture is well combined and smooth. Taste and adjust the harissa for your desired spice level.

        Combine Everything: Pour the harissa marinade over the carrots in the mixing bowl. Toss thoroughly to ensure that each carrot is evenly coated with the vibrant, spicy marinade.
