  • 0.5 cup unsalted butter, softened
  • 2.0 cloves garlic, minced
  • 1.0 tablespoon fresh basil, chopped
  • 1.0 tablespoon fresh parsley, chopped
  • 1.0 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon smoked paprika
  • None wedges fresh lime
  • None optional Grated Parmesan or Cotija cheese

Instructions
 

  • Prepare the Herb Butter: In a medium bowl, combine the softened butter, minced garlic, chopped basil, parsley, and thyme. Mix well until all the herbs are evenly incorporated. Season with salt, pepper, and smoked paprika (if using). Set aside.
  • Prepare the Corn: Husk the corn and remove all silk strands. Rinse under cold water and pat dry with a kitchen towel.
  • Coat the Corn: Generously spread the herb butter mixture over each ear of corn, ensuring to cover all sides for maximum flavor. Wrap each buttered ear tightly in aluminum foil.
  • Roast the Corn: Preheat your grill to medium-high heat (about 400°F/200°C). Place the wrapped corn directly on the grill grates. Roast for 15-20 minutes, rotating every 5 minutes to ensure even cooking.
  • Check for Doneness: Carefully unwrap one ear of corn after 15 minutes to check if it’s tender. If not, rewrap and continue roasting for an additional 5 minutes.
