Ingredients

2 cups Greek yogurt (choose either plain or your favorite flavored variety)

1 cup mixed frozen berries (strawberries, blueberries, raspberries, and blackberries work beautifully)

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon pure vanilla extract

1/4 cup granola (for a delightful crunch on top)

Fresh mint leaves (optional, for garnish and added freshness)

Instructions

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to stir the mixture until it is smooth and well integrated, ensuring the sweetener and vanilla are evenly distributed throughout the yogurt.

Carefully fold in the frozen mixed berries using a spatula. Take your time to gently combine the berries with the yogurt without breaking them apart too much; this will help maintain their shape and create a lovely marbled effect in the yogurt.

Prepare a muffin tin by lining each cup with paper liners or silicone muffin cups to make for easy removal later. Spoon the yogurt and berry mixture evenly into each cup, filling them approximately three-quarters full to allow room for expansion as they freeze.

Transfer the muffin tin to the freezer and allow the yogurt cups to freeze for at least 4 hours or until they are completely solid, ensuring a refreshingly frosty treat.

When you're ready to enjoy, remove the yogurt cups from the freezer and let them sit at room temperature for about 5 minutes. This slight thaw will help soften the cups for easier removal.

Before serving, sprinkle each cup with granola for an added crunch and place a fresh mint leaf on top for a burst of color and an aromatic touch.

Serve immediately and indulge in your delightful, healthy frozen treats that are perfect for a refreshing snack!
