Ingredients

1 cup full-fat coconut milk

1/2 cup plain Greek yogurt

1/3 cup honey or maple syrup

Zest from 2 limes

1/4 cup fresh lime juice (approximately 2 limes)

1 teaspoon pure vanilla extract

1/2 cup unsweetened shredded coconut

Pinch of sea salt

Optional: Lime wedges and extra shredded coconut for garnish

Instructions

In a medium mixing bowl, combine the full-fat coconut milk, plain Greek yogurt, honey or maple syrup, lime zest, fresh lime juice, and vanilla extract. Whisk the mixture vigorously until it is completely smooth and well combined, ensuring no lumps remain.

Gently fold in the shredded coconut and a pinch of sea salt using a spatula, making sure the coconut is evenly distributed throughout the creamy mixture for consistent flavor in every bite.

Carefully pour the mixture into silicone muffin cups or small dessert cups, filling each about 3/4 full. Ensure an even distribution to promote uniform freezing.

To eliminate any trapped air bubbles, lightly tap the cups on the countertop, allowing the mixture to settle.

Transfer the filled cups to the freezer and leave them to freeze for a minimum of 4-6 hours, or until they are completely solid and firm to the touch.

When ready to serve, remove the cups from the freezer and allow them to sit at room temperature for about 5-10 minutes. This will help soften the edges, making it easier to remove the frozen creams from the molds.

With care, peel away the silicone cups or dessert containers, then gently place the frozen coconut lime cream cups onto serving plates to showcase their beautiful, creamy texture.

Optional: For a vibrant finishing touch, garnish each cup with lime wedges and a sprinkle of additional shredded coconut. This adds a delightful tropical flair and makes the presentation pop.

Indulge in your refreshing Frozen Coconut Lime Cream Cups and enjoy the perfect blend of creamy coconut and zesty lime flavors!
