When preparing your Frozen Greek Yogurt Cappuccino Pops, achieving the perfect swirl of yogurt and cappuccino mixture is essential for both aesthetics and taste. To maintain those beautiful swirls, a gentle folding technique is crucial. Start by adding your Greek yogurt to the cappuccino mixture in a separate bowl. Using a spatula, carefully fold the yogurt into the coffee mixture. Aim to keep the movement light and airy, turning the spatula over itself rather than stirring vigorously. This approach preserves the yogurt's texture and creates visually appealing swirls without completely blending the two mixtures.

Ingredients

2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee, cooled to room temperature

1/2 cup milk (choose between dairy or your favorite non-dairy alternative)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

A pinch of sea salt

Optional: chocolate shavings or finely chopped nuts for garnish

Instructions

Prepare the Coffee Base: In a medium mixing bowl, whisk together the cooled brewed espresso (or strong coffee) and milk until fully combined. Ensure the coffee has cooled to prevent any melting of the yogurt.

Mix the Yogurt: In a large bowl, add the Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of sea salt. Use a whisk or an electric mixer set to low speed to mix until the mixture is completely smooth and creamy.

Combine the Mixtures: Gradually fold the coffee mixture into the yogurt mixture. Use a spatula to gently incorporate them until you achieve a uniform consistency, taking care not to over-mix to keep some delightful yogurt swirls.

Pour into Molds: Carefully spoon the blended mixture into popsicle molds, leaving a small gap at the top of each mold to allow for expansion during freezing. If you would like, sprinkle in chocolate shavings or chopped nuts for extra texture at this point.

Insert Sticks: Insert popsicle sticks into each mold. If your molds don’t come with sticks, freeze the pops for about 1 hour until slightly firm, then insert the sticks.

Freeze: Cover the molds with their lids or a layer of plastic wrap. Freeze for at least 6 hours, or until the pops are completely solid.

Unmold the Pops: To release the pops, run warm water over the outside of the molds for a few seconds to help loosen them. Gently pull the popsicles out of the molds.

Serve: Indulge in your delightful Greek Yogurt Cappuccino Pops right away! For a special touch, garnish with a sprinkle of ground cinnamon or extra chocolate shavings before serving.
