Frozen Kiwi Strawberry Pops

4 ripe kiwis, peeled and sliced into rounds

2 cups fresh strawberries, hulled and sliced into halves

1/4 cup honey (or use agave syrup for a vegan-friendly option)

1 cup coconut water (or substitute with regular water)

1 tablespoon freshly squeezed lime juice

Optional: Small mint leaves for garnish

Prepare the Kiwi Mixture: In a blender, combine the sliced kiwis, half of the sliced strawberries, half of the honey, and 1/2 cup of coconut water. Blend on high until completely smooth. Taste and adjust sweetness if desired.

    Layer the Kiwi Mixture: Pour the blended kiwi mixture into popsicle molds, filling each mold about one-third full. Place the molds in the freezer for approximately 1 hour, or until the kiwi layer is slightly firm to the touch.

      Create the Strawberry Mixture: Without cleaning the blender, add the remaining sliced strawberries, the other half of the honey, the remaining coconut water, and lime juice to the blender. Blend until smooth and well combined.

        Pour Strawberry Layer: Remove the molds from the freezer and carefully pour the strawberry mixture over the partially frozen kiwi layer, filling each mold to the top.

          Optional Swirling: For a fun visual twist, use a skewer or a knife to gently swirl the kiwi and strawberry mixtures together in each mold, creating a marbled effect. Be careful not to overmix; you want to maintain some distinct layers.

            Add Garnish (Optional): Place a few small mint leaves on top of the strawberry layer for a pop of color and a refreshing scent.

              Freeze Again: Insert the popsicle sticks into the molds and return them to the freezer. Freeze for at least 4-6 hours, or until the pops are completely solid.

                Serve and Enjoy: When ready to serve, run warm water over the outside of the molds for a few seconds to loosen the pops. Gently pull them out and enjoy your refreshing Kiwi Strawberry Chill Pops on a sunny day!
