Frozen Lemon Yogurt Bites with Chia

Ingredients
  

1 cup plain Greek yogurt

1/4 cup honey or maple syrup (adjust sweetness to taste)

1/2 cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of one lemon (for an extra zing)

1/4 cup chia seeds

1 teaspoon pure vanilla extract

A small pinch of salt

In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), freshly squeezed lemon juice, lemon zest, vanilla extract, and a pinch of salt. Use a whisk to mix thoroughly until all ingredients are well incorporated and the mixture is smooth.

    Carefully fold in the chia seeds using a spatula or spoon, ensuring they are evenly distributed throughout the yogurt mixture for consistency in every bite.

      Prepare a mini muffin tray or silicone mold by lining it with parchment paper or lightly greasing each compartment with cooking spray. This will help in effortlessly removing the bites after freezing.

        Using a spoon or small scoop, fill each compartment of the tray or mold with the lemon yogurt mixture, filling them approximately 3/4 full for the best results.

          Smooth the tops of each filled compartment using the back of a spoon or spatula to create an even and polished surface.

            Cover the filled tray or mold with plastic wrap or a lid to protect the bites while they freeze. Place it in the freezer and allow it to freeze for a minimum of 4-6 hours, or until the yogurt has completely firmed up.

              Once the bites are frozen solid, remove them from the mold. If using a mini muffin tray, gently press the bottom of the tray to help release the yogurt bites without breaking them.

                Store the frozen lemon yogurt bites in an airtight container or a resealable freezer bag. To prevent them from sticking together, separate the layers with small pieces of parchment paper.
