1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups creamy lemon yogurt (substitute with lemon curd for a richer flavor)

1 (14 oz) can sweetened condensed milk

½ cup freshly squeezed lemon juice (approximately 3-4 lemons)

1 tsp vanilla extract

Zest of 1 lemon

Whipped cream, for topping (optional)

Lemon slices or extra lemon zest, for garnish (optional)

Instructions
 

Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Stir until the mixture is uniform and resembles wet sand. Firmly press this crumb mixture into the bottom of a 9x9-inch baking dish to create an even layer. Place the dish in the refrigerator for about 15 minutes to allow the crust to set.

    Mix the Filling: In a large mixing bowl, whisk together the lemon yogurt (or lemon curd for a richer taste), sweetened condensed milk, freshly squeezed lemon juice, vanilla extract, and lemon zest. Continue whisking until the mixture is smooth and fully combined.
